I am aware you can launch multiple instances of the client provided you have a separate folder location for each instance - I was just wondering if using multiple instances means simulations are performed in parallel or does it just process the same project?

If you start e.g. 3 client instances, certain simulation types will be spread across all three simultaneously. Custom batches and version 2 gearing strategies are the main types of simulations that can take advantage of this right now.
Single run simulations always run on a single client. But if you have multiple clients, you could queue up multiple single runs in quick succession, and they would run in parallel on all of your clients.
