Could you please post a Snapshot ID of the character in question, for context please? Thank you.
Please also be mindful of the way that AMR reaches its conclusions for character optimisation… and that advise from any optimisation source is JUST that; advice, to be accepted or rejected as appropriate.

Your approach is much closer to an all-offense build than an all-defense build. If you want to start from the all-defense strategy, yeah, you’ll need to customize it to get more haste/crit like this. (If you set the toughness slider to all offense, you’ll see that the result is pretty similar to yours without any customization – it goes a little heavier on the crit though.)
We will be going through each spec and determining if there are some extra builds that we want to provide as presets, but we’re beta-testing the feature a bit first.
In general, our recommendations for tanks differ a bit from the community when you use the all-defense default. The main difference is that we don’t have a bias towards things that have DPS synergy when you choose the all-defense build. It really is an all-defense build.
If you are going by the advice that you see somewhere else out on the internet, you will want to move the toughness slider much closer to all-offense. The reason that we added the toughness slider is that it really is up to personal preference for a tank. We default to all-defense to be conservative – when in doubt, it’s better to go a bit too tough, then dial it back as you get comfortable with the fights.

Actually, no.
I lose a ton of stats but gain ~ 4% versatility.
With or without customization.
Idk, seems like something changed.
The old “All Offsense” indeed stacked high crit.
But that is not the case anymore.
It suggest versatility enchants now.

I don’t see it suggesting versatility enchants with that snapshot.
You have a custom stat ratio set in that snapshot – that will take priority over everything else when choosing stats, regardless of where you put the toughness slider.
On the “All Offense” setting, without customization it stacks/suggest versatility.
That wasn’t the case a few days ago.
