AMR recently started showing I should have two gems on gear that either have only one socket or no sockets. I don’t see a way to add additional sockets to these gear pieces of gear.

If you mean how to ADD them:
For Rings & Necklaces, you can buy them on the Auction House or get a Jewel-crafter to make them.
The Armour ones are sold by PvP Vendors & are for PvP pieces only:
They can be added to Necklaces & Rings, too, but are the only ones that armour will accept.
